Sheet Pan Rooster Parmesan

Substances:

  • 3 cups blended grape or cherry tomatoes
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/4 teaspoon crushed pink pepper flakes
  • 3 tablespoons olive oil, divided
  • Kosher salt and freshly floor black pepper
  • 4 rooster cutlets
  • 1 1/2 cups Panko*
  • 1/2 cup freshly grated Parmesan
  • 1/2 cup all-purpose flour
  • 2 giant eggs, overwhelmed
  • 6 ounces recent mozzarella, sliced
  • Contemporary basil leaves

Instructions:

  1. Preheat oven to 400 levels F. Frivolously oil a baking sheet or coat with nonstick spray.
  2. In a medium bowl, mix tomatoes, garlic, oregano, pink pepper flakes and 1 tablespoon olive oil; season with salt and pepper, to style.
  3. Season rooster with salt and pepper, to style.
  4. PANKO MIXTURE: In a big bowl, mix Panko, Parmesan and remaining 2 tablespoons olive oil; season with salt and pepper, to style.
  5. Working one after the other, dredge rooster in flour, dip into eggs, then dredge in PANKO MIXTURE, urgent to coat.
  6. Place rooster in a single layer onto the ready baking sheet and coat with nonstick spray.
  7. Place into oven and bake for 8 minutes.
  8. Place tomato combination in a single layer across the rooster on the ready baking sheet.
  9. Place into oven and bake till the rooster is cooked by and tomatoes have burst, an extra quarter-hour. Prime rooster with mozzarella over the past 10 minutes of cooking time.
  10. Serve instantly, garnished with basil, if desired.
